This Imperial Stout presents an imposing sensory profile, merging intense roasted grains with sophisticated barrel aging and spice. Jet black and viscous, it opens with a dense aroma of dark chocolate and espresso, enriched by the vinous, oaky elegance of cognac barrels. The addition of Guajillo chilis contributes nuanced notes of dried dark fruit and leather, while Habanero provides a subtle tropical fruitiness before introducing a rising, controlled heat. On the palate, deep layers of cocoa and molasses are balanced by a firm bitterness and the warming presence of cognac. The finish is long and complex, defined by lingering chili spice and a smooth, spirit-forward warmth.
Appearance. Jet black and completely opaque. Pours with a dense, persistent deep tan head that leaves thick lacing on the glass. High viscosity is apparent through noticeable legs upon swirling.
Aroma. High intensity with a complex blend of bittersweet chocolate, roasted coffee, and charred grain. Strong vinous and spirit-forward notes of cognac and oak vanillins are prominent. The chilis contribute a secondary layer of dried plum and raisin from the Guajillo, with a very faint tropical pepper fruitiness from the Habanero.
Taste. Initial impression is of rich, dark cocoa and roasted malt sweetness. Mid-palate reveals layers of toasted oak, cognac-soaked fruit, and black licorice. The Habanero provides a clean, building heat that complements the high hop bitterness and roasted astringency. Guajillo adds an earthy, leathery depth. The finish is long and bittersweet with a lingering warmth of both alcohol and spice.
Mouthfeel. Very full-bodied, thick, and chewy with a velvety, luscious texture. Carbonation is low to moderate. Significant alcohol warmth is present but smooth, enhanced by a mild chili prickle on the tongue.
