To Øl Jule Malt
This Imperial Stout is an opulent, high-gravity expression of holiday decadence, pushing the boundaries of the style with its 15% ABV. Massive quantities of lactose and Cassonade sugar create a viscous, dessert-like foundation for a complex grain bill featuring Pale malt, Special B, Melanoidin, Chocolate malt, Dark Crystal, and Roasted Barley. The sensory experience is dominated by rich notes of dark chocolate, burnt sugar, and dried fruits, accented by a subtle thread of Smoked malt. While Tettnanger, Tomohawk, and Sorachi Ace hops provide structural bitterness, the profile remains decidedly sweet, concluding with profound, lingering warmth and a velvety, full-bodied finish.
Appearance. Jet black and opaque (SRM 40+). Dense, dark tan to brown head with moderate to low retention; high viscosity creates visible legs on the glass.
Aroma. High intensity. Rich, deep complexity featuring bittersweet chocolate, espresso, and roasted grain. Strong dark fruit esters of raisin, plum, and fig. Notable sweet creaminess from lactose and a faint hint of wood smoke. Hop aroma is very low, overshadowed by malt and clean, warming alcohol.
Taste. Initial impression is intensely sweet and luscious. Flavors of dark cocoa, toasted bread, and burnt sugar dominate, supported by deep fruit notes like black currants and prunes. A moderate bitterness from the hops provides structural balance, though the finish is long, sweet, and rich with residual sugars. Complex layers of roast and dark fruit persist into the aftertaste.
Mouthfeel. Very full-bodied and chewy with a velvety, luscious texture. Low to moderate carbonation. A significant, smooth alcohol warmth is present and comforting. High creaminess and low astringency.
