To Øl DOX is a bright and refreshing Session IPA, designed as a companion for cinematic exploration at CPH:DOX. It pours a clear, pale gold, releasing a punchy hop-forward profile rich with notes of citrus zest and tropical fruit. Built with a focused, lean malt bill that allows the hops to remain center stage, it offers a moderate bitterness that is assertive yet balanced for high drinkability. This light-bodied ale finishes crisp and dry, embodying a clean fermentation and the modern, hop-centric craftsmanship typical of the brewery’s approach to sessionable American ales.
Appearance. Color is pale gold to medium gold (approx. 6 SRM). Crystal clear to a very slight haze. Pours with a medium-sized, frothy white head that shows good persistence and light lacing.
Aroma. Moderate to high hop intensity featuring notes of fresh citrus zest, tropical mango, and a light resinous undertone. Supporting the hops is a low, clean, grainy-sweet malt character. Fermentation is clean with very light fruity esters.
Taste. The initial impression is decidedly hop-forward, showcasing citrus and stone fruit flavors. A medium-low grainy malt backbone provides support without adding significant sweetness. Bitterness is moderate to firm, well-balanced against the lighter malt profile. The finish is dry and crisp with a lingering hoppy aftertaste of grapefruit pith and light pine.
Mouthfeel. Medium-light body with a smooth, light texture. Carbonation is medium-high, providing a lively, refreshing effervescence. There is no perceived alcohol warmth, and the finish is clean without astringency.
