Sweet Stout 7 º 61 IBU
This Milk Stout presents a deep, opaque black profile, defined by its exceptionally thick body. Despite the heavy use of lactose to build a creamy, viscous texture, the palate remains remarkably balanced rather than cloying. Dominant notes of roasted coffee and dark chocolate are enriched by a subtle hint of smoke. A significant hop presence featuring Hallertauer, Cascade, and Nelson Sauvin introduces unexpected layers of floral and tropical fruit complexity. While the Sweet Stout style usually leans sweet, this interpretation emphasizes a firm bitterness and a lingering, roasty finish, creating a sophisticated interplay between velvety mouthfeel and sharp, dark malt character.
Appearance. Opaque black (approx. 40 SRM). Topped with a dense, creamy beige head consisting of fine bubbles, though showing limited persistence.
Aroma. Moderate to high intensity. Strong presence of roasted malts evoking espresso and dark cocoa, complemented by subtle wisps of smoke. Hop aroma is noticeable, offering floral notes from Hallertauer, citrus from Cascade, and a faint tropical/gooseberry touch from Nelson Sauvin. Low fruity esters.
Taste. Initial impression of rich roasted grains, espresso, and bitter chocolate. High bitterness for the style provides a sharp counterpoint to the creamy lactose texture. Hop flavors contribute notes of grapefruit and white grape. The finish is long and roasty with a subtle smoky aftertaste, remaining balanced and off-dry rather than dessert-sweet.
Mouthfeel. Full-bodied and exceptionally thick. The lactose provides a heavy, creamy, and velvety texture. Carbonation is moderate. A noticeable but well-integrated alcohol warmth is perceptible throughout.
