This expression marries a 2020 dark wort with mature beer from 2018, yielding a complex sensory profile of black cherry, plum, and red currant. The oak interaction introduces subtle vanilla and a refined tannic structure reminiscent of a high-acid red wine. Expect a deep burgundy hue with a vibrant lactic acidity balanced by soft, toasty malt notes. The finish is remarkably dry and crisp, showcasing the interplay between bright fruit esters and earthy, wood-derived depth.
Appearance. Deep burgundy to reddish-brown (15-17 SRM). Brilliant clarity. Pale tan head with average retention and fine lacing.
Aroma. High intensity complex fruity-sour profile. Prominent scents of black cherries, red currants, and plums. Moderate toasty malt with hints of chocolate and vanilla from the French oak. Low acetic acid provides a sharp, wine-like edge without being vinegary. No hop aroma.
Taste. Initial burst of tart red fruit—cherry and orange—followed by a rich, toasty malt backbone. High sourness that is complex, not one-dimensional, balanced by a light sweetness from the blending. Subtle oak tannins and vanilla emerge mid-palate. No hop flavor; bitterness is very low, with acidity providing the primary structure. Dry, prickly, and lingering fruit finish.
Mouthfeel. Medium body with a noticeable tannic grip from the foeder aging. Moderate carbonation. Prickly acidity leads to a crisp, deceivingly light mouthfeel. Low alcohol warmth despite the 6.7% ABV.
