This Imperial Stout presents a decadent sensory profile born from a complex blend of barrel-aged and fresh components. The influence of thirty-two months in maple syrup barrels that previously held bourbon imparts deep layers of caramelized sugar and vanillin, seamlessly integrating with the rich, roasty base. Heavy conditioning on Mostra Coffee provides an aromatic punch of freshly ground beans and dark cocoa, while additional maple syrup enhances the beer's luscious, velvety depth. On the palate, expect a harmony of charred oak, sticky maple, and espresso, balanced by a firm bitterness and a noticeable but smooth alcohol warmth, resulting in a luxurious and multifaceted experience.
Appearance. Opaque jet black (40+ SRM) with a thick, creamy, deep tan head. Visible viscosity and slow-moving legs cling to the glass, indicating high alcohol and extract content.
Aroma. High intensity with a complex bouquet of freshly roasted coffee and dark chocolate. Prominent maple syrup sweetness blends with bourbon-derived vanillin and toasted oak. Subtle dark fruit esters like prunes and raisins are buried under rich layers of charred malt and caramel.
Taste. Initial flavors of rich espresso and bittersweet chocolate lead into a mid-palate of decadent maple syrup and vanilla. The bourbon barrel aging adds layers of coconut and charred wood.
