This Straight Sour Beer is a liquid homage to the classic Danish dessert, Risalamande. It presents an inviting sensory profile where clean lactic sourness meets the lush, tart character of sour cherries. The addition of rice and lactose provides a subtle, creamy foundation that supports fragrant layers of sweet vanilla and nutty almond. These ingredients weave together to evoke a marzipan-like sweetness balanced by a refreshing, lemony acidity. Despite its dessert-inspired components, the beer remains light and approachable, finishing with a crisp, fruity brightness that highlights the interplay between the delicate pale malts and the vibrant, red fruit adjuncts.
Appearance. Pours a soft pinkish-red hue (approximately 6–10 SRM) with a slight haze from the use of rice and lactose. Topped by a pink-tinted, dense head with moderate to poor retention and light lacing.
Aroma. High intensity of tart, sour cherries and marzipan-like almond. A prominent clean lactic sourness is complemented by sweet vanilla and a soft, bready malt backdrop. No hop aroma is present.
Taste. Initial impression is a clean lactic acidity, followed immediately by flavors of juicy sour cherries and a creamy, almond-forward sweetness. Low notes of vanilla provide a dessert-like complexity, while rice and lactose offer a smooth, grainy base. The finish is off-dry and refreshing with a lingering tart cherry aftertaste. Hop bitterness and flavor are undetectable.
Mouthfeel. Medium-light body with a slightly creamy texture from the lactose and rice. Carbonation is moderate to high, providing a lively, effervescent feel. No alcohol warmth is perceived.
