Threshold Brewing’s Homegrown Polish IPA reimagines the classic American IPA through the lens of Polish terroir, specifically utilizing experimental new wave hops Z1B1 and Pt01. The sensory profile is defined by these unique cultivars, which provide an aromatic departure from typical citrus-heavy IPAs toward nuanced notes of white stone fruit, dried herbs, and a delicate floral spice. A lean, grainy malt bill allows these distinctive hops to remain the focal point, resulting in a crisp and assertive beverage. The finish is notably dry and clean, characteristic of the style, but elevated by a novel, complex European hop character that lingers pleasantly.
Appearance. Color is a deep, brilliant gold (8 SRM). It features a medium-sized, long-lasting off-white head with excellent persistence and intricate lacing.
Aroma. High intensity hop-forward aroma featuring white peach, apricot, and herbal tea notes from the Z1B1 and Pt01 hops, supported by a low, clean, bready malt presence. Fermentation is very clean with negligible esters.
Taste. Initial impression is hop-forward and bright, showcasing stone fruit and a spicy, resinous complexity. Malt flavor is low and cracker-like, providing a subtle foundation for the medium-high bitterness. The balance is decidedly bitter with a dry, clean finish and a lingering herbal aftertaste.
Mouthfeel. Medium body with a smooth, crisp texture. Carbonation is moderate-high. There is a very light, smooth alcohol warmth appropriate for its 6.5% ABV without any harshness.
