This Wild Specialty Beer artfully translates the Old-Fashioned cocktail into a complex, wild-fermented ale. Vibrant aromas of fresh orange zest and sweet maraschino cherry meld seamlessly with the funky, acidic character of the wild base. A subtle, bourbon-esque woodiness provides depth without the weight of a high-gravity barrel-aged beer. The 6.5% ABV ensures a smooth, approachable body, where the tartness of the fermentation brightens the stone fruit and citrus notes. It finishes dry and clean, leaving a lingering impression of spiced fruit and elegant oak, evoking a sophisticated, well-balanced cocktail in a refreshing, effervescent form.
Appearance. Deep gold to light amber with copper highlights (SRM 8-13). Moderate off-white head with fair retention; slight haze is present from the use of citrus oils and wild fermentation.
Aroma. High intensity aromatics featuring bright orange zest and sweet maraschino cherry. A foundational wild funk provides notes of leather and earthy hay, supported by a subtle vanilla and toasted oak bourbon-esque character. Low grainy malt sweetness.
Taste. Initial impression is a sharp, clean lactic tartness followed by layers of orange peel and cherry skin. Malt flavor is low, providing a neutral cracker-like base. Hop bitterness is low, as the acidity drives the balance. Notes of light caramel and oak tannin appear mid-palate. The finish is dry and smooth with a lingering citrus and spirit-like aftertaste.
Mouthfeel. Medium-light body with moderate-high carbonation that provides a prickly, refreshing texture. Very low alcohol warmth; smooth and well-integrated. Minimal astringency from the zest and wood.
