This robust American Amber Ale presents an intense sensory profile driven by a complex malt bill featuring Shepherd's Delight, Aurora, and spicy Rye. Aromas of dark caramel and dried fruits from Sarah's Belgian Candi Syrup mingle with the floral, citrusy lift of Ahtanum and the rich berry and tropical notes of Mosaic hops. The palate is full-bodied and assertive, balancing deep toasted malt sweetness against a firm bitterness and a touch of wheat-driven creaminess. Nuances of plum and raisin emerge from the high-gravity fermentation, leading to a warming, lingering finish that highlights its formidable strength and artisanal depth.
Appearance. Deep copper-red to reddish-brown (15-17 SRM) with excellent clarity. It supports a moderately large, persistent off-white head with fine lacing.
Aroma. High intensity; dominant aromas of dark caramel, toasted biscuit, and subtle spice from the rye malt. Hop character is moderate, offering floral, citrus, and ripe berry notes. Moderate fruity esters suggesting dried plum and raisin are present due to the Belgian Candi Syrup and high ABV.
Taste. Bold initial impression of malty sweetness and dark caramel. Flavors of dried fruit and toasted bread are balanced by a firm, moderately-high hop bitterness. Mosaic hops provide secondary flavors of blueberry and tropical fruit. The finish is medium-full with a lingering warmth and a complex, slightly spicy aftertaste from the rye and alcohol.
