Three Sisters Brewery Lila
Lila is a sophisticated and delicate Witbier that elevates traditional Belgian profiles with a botanical infusion from Juno Gin. The use of botanical-infused mash water and the addition of juniper berries and chamomile create a complex herbal and floral tapestry. Hand-zested oranges and coriander seeds provide a bright, zesty citrus core that balances the bready, grainy malt base. The addition of extra fine gin during fermentation deepens the botanical character without introducing harshness, while the Belgian yeast contributes a subtle, peppery spice. The result is a refreshingly crisp, effervescent ale with a dry, aromatic finish that remains remarkably light on the palate.
Appearance. Very pale straw with a milky, whitish-yellow shine; very cloudy appearance from starch and yeast haze. Features a dense, white, moussy head with excellent retention.
Aroma. Moderate intensity with a bready malt foundation and light honey notes. Aromatics are dominated by zesty orange, lemony coriander, and a distinct herbal-piney juniper character. Delicate floral chamomile and light spicy-peppery yeast esters provide additional complexity.
Taste. Initial bready and grainy malt flavors are followed by a wave of citrusy orange and herbal botanicals. The juniper and chamomile offer a unique gin-like complexity that complements the spicy coriander. Hop bitterness is low, serving only to balance the malt, leading to a very crisp and dry finish with no harshness.
Mouthfeel. Medium-light body with a smooth, slightly creamy texture. High carbonation creates a lively, effervescent sensation. Very low, well-integrated alcohol warmth with no astringency.

We also added chamomile, coriander seeds, hand-zested oranges and juniper berries to the boil. Then, for good measure, a lashing of Juno's extra fine gin during fermentation! Balance with the subtle spice from the Belgian yeast, the result is surprisingly delicate and refreshing and perfect for summer... autumn... winter... and oh yeah spring!
