Come the Revolution presents a vibrant sensory journey defined by the immediate impact of harvest-fresh New Zealand hops. Riwaka drives a bold aromatic profile of pungent pink grapefruit and zesty passionfruit, while Pacific Sunrise adds layers of sweet melon and Meyer lemon. This American Pale Ale balances these intense tropical and citrus notes against a clean, bready malt backdrop. The palate is bright and refreshing, showcasing a moderate bitterness that cleanses the tongue for a crisp, dry finish. It is a quintessential showcase of hop-forward character, where the assertive fruit notes from Riwaka and Pacific Sunrise remain harmoniously integrated within a drinkable, medium-light frame.
Appearance. Radiant pale golden with brilliant clarity (SRM 5-6). Pours with a moderately large, frothy white head that exhibits good retention and leaves delicate lacing on the glass.
Aroma. High intensity hop aroma featuring the signature punch of Riwaka with notes of grapefruit, citrus zest, and tropical passionfruit. Pacific Sunrise contributes underlying scents of ripe melon and stone fruit. Supported by low, neutral grainy maltiness and a clean fermentation profile without significant esters.
Taste. Leading with high hop flavor echoing the aroma’s citrus and tropical character. Riwaka provides a sharp grapefruit snap, while Pacific Sunrise offers softer lemon and melon nuances. Bitterness is moderate to firm (approx. 40 IBU), supported by a subtle, bready malt spine. The finish is medium-dry and clean, with lingering hop resins that do not become harsh.
Mouthfeel. Medium-light body with moderate to high carbonation, providing a lively and crisp texture. Overall smooth finish with no perceived alcohol warmth and zero astringency.
