Aroma. High intensity; dominant sharp lactic character with notes of lemon and tart apple; moderate toasted malt and dark bread; secondary notes of oak and subtle spirit from barrel aging; no hop aroma; clean fermentation.
Taste. Strong, clean lactic sourness provides the initial impression; supportive malt flavors of toasted grain and dark bread follow; undetectable hop bitterness and no hop flavor; moderate fruit character including plum and tart cherry; finish is very dry; balance is heavily focused on acidity with a lingering oak and tart apple aftertaste.
