Three Hills Brewing

This Hazy IPA showcases a vibrant sensory landscape driven by a unique yeast blend and a complex hop bill. Nelson Sauvin T45 leads the charge with distinct notes of white wine and gooseberry, while Cashmere T90 adds layers of ripe melon and lemon zest. Simcoe T90 provides a foundational citrus punch of grapefruit and a hint of earthy pine. The beer presents a soft, juicy profile with a supportive, grainy malt backbone. On the palate, the fruit intensity is high, transitioning into a smooth, pillowy finish with restrained bitterness, exemplifying the lush, approachable character of a modern New England-style ale.

Appearance. 3-6 SRM. Opaque, straw to light orange with a luminous, healthy haze. Persistent, rocky, meringue-like white head with excellent lacing and high retention.

Aroma. High intensity hop aroma featuring distinct white grape and gooseberry from Nelson Sauvin, bright grapefruit from Simcoe, and sweet honeydew melon from Cashmere. Background notes of bready, grainy malt and subtle tropical esters from the house yeast blend. No caramel, toast, or DMS present.

Taste. Intensely fruity initial impression. Dominant flavors of gooseberry, melon, and citrus rind. Low to medium-high perceived bitterness that feels soft and integrated rather than sharp. Low bready malt flavor. Fermentation is clean with supportive fruit esters. Finishes smooth and off-dry with a lingering tropical and citrus aftertaste.

Mouthfeel. Medium-full body with a soft, pillowy texture. Moderate carbonation. Subtle alcohol warmth from the 6.8% ABV. Smooth and creamy without any hop astringency or raw starch harshness.
