Belgian Tripel 10 º
Ascension is a sophisticated Belgian Tripel that hides its potent 10% strength behind a masterclass of fermentation character. The sensory experience is led by a complex bouquet of peppery phenols and citrusy esters reminiscent of lemon peel and fresh orange. A base of soft, honey-like Pilsner malt provides a delicate sweetness that quickly yields to a firm hop bitterness and a characteristic bone-dry finish. Effervescent and bright, it balances its substantial alcohol with high carbonation, ensuring a deceptively drinkable profile. The yeast-driven spice lingers pleasantly, rounding out a profile that is both elegant and powerfully expressive of the monastic tradition.
Appearance. Deep gold to pale amber with brilliant clarity. Pours with a massive, rocky, long-lasting white head that leaves intricate Belgian lacing on the glass. Active effervescence is visible.
Aroma. High intensity aromatic profile featuring seamless peppery and clove-like phenols. Fruity esters suggesting lemon and ripe orange are prominent, supported by a light, grainy-sweet Pilsner malt character with hints of honey. Hops are low and floral, while alcohol is soft and slightly spicy.
Taste. Initial soft malt sweetness quickly transitions into a complex interplay of spicy yeast and citrus fruit. Moderate to high bitterness provides structure, leading to a crisp, very dry finish. Flavors of pepper and orange zest persist in the aftertaste. Despite the high gravity, it lacks heavy sweetness or harsh alcohol.
Mouthfeel. Medium body that feels lighter due to very high carbonation and high attenuation. A noticeable but smooth alcohol warmth is present without being fusel or hot. Effervescent and creamy on the tongue.
