This Double IPA presents a vibrant sensory profile, opening with a bold bouquet of intense pineapple, grapefruit, and lemon zest. A distinct piney resin and a subtle hint of pear drop esters add complexity to the aroma. The palate is defined by a chewy, biscuity malt backbone that supports a surge of juicy tropical fruit and tangerine notes. Despite its 7.4% strength, it maintains high drinkability with a clean, firm bitterness that lingers alongside citrus oils. It expertly balances a rich malt character with the aggressive hopping of a modern strong ale, finishing dry and refreshing.
Appearance. Pours a honey-hued light gold (SRM 6-8) with an opaque clarity and a large, persistent off-white head that leaves dense lacing on the glass.
Aroma. High intensity hop aroma dominated by pineapple, grapefruit, and lemon zest, supported by a resinous pine character. A light, clean biscuity malt sweetness sits in the background, accompanied by subtle fruity esters of pear drops.
Taste. Initial impression of juicy pineapple and tangerine followed by intense citrus hoppiness and resinous pine. The malt provides a supportive, biscuity, and chewy flavor without excessive sweetness. Bitterness is high and firm but smooth, leading to a medium-dry finish with a lingering grapefruit aftertaste.
Mouthfeel. Medium body with a smooth, slightly creamy texture. Carbonation is moderate-high. A gentle, well-integrated alcohol warmth is present, without any harshness or hop-derived astringency.
