Serpent is a sophisticated reimagining of a Belgian Golden Strong Ale, marrying robust brewing with the rustic influence of wild cider lees from Herefordshire. Pouring a brilliant gold, it leads with an elegant interplay of ripe pear esters and herbal hop notes, which quickly give way to a layered, wild-yeast funk and a delicate, wood-derived structure from a year of barrel aging. The cider lees introduce a refined, vinous tartness and a firm, exceptionally dry finish that cuts through the significant strength. This effervescent ale artfully balances spicy phenols with the earthy acidity and complexity of traditional cider ferments.
Appearance. Deep yellow to gold (5-6 SRM) with a massive, long-lasting, rocky white head that creates intricate Belgian lacing. The body is clear and highly effervescent, with fine bubbles rising continuously.
Aroma. High intensity bouquet featuring pear-like fruity esters and spicy, herbal hops. A complex funky character from the cider lees presents as earthy, rustic notes and light leather, layered over a nearly neutral, slightly grainy-sweet malt base. Peppery alcohol and a subtle vinous tartness are evident.
Taste. The initial impression is of pome fruit and soft malt, which is immediately overtaken by a firm herbal bitterness and a crisp, cider-like tartness. Flavors of peppery phenol and wild funk integrate with the barrel-derived wood notes. It possesses a long, very dry finish with a lingering, clean acidity and no residual sugar.
Mouthfeel. Medium-light body that feels lighter than the gravity suggests due to very high carbonation and a dry finish. Smooth, noticeable alcohol warmth is present without being hot. The mouthfeel is effervescent and crisp with a light tannic firmness.
