This limited release American Stout from Thornbridge presents a sophisticated interplay between deep, roasted grains and refreshing botanicals. Pouring an opaque midnight black, Baize leads with an aromatic profile of rich dark chocolate and a sharp, cooling hit of mint. The use of Chocolate malt provides a sturdy backbone of bittersweet cocoa and espresso, which is seamlessly integrated with a punchy, peppermint-like brightness. This minty infusion offers a unique, refreshing contrast to the traditional hop bitterness and resinous undertones. The result is a balanced, dessert-adjacent stout that remains remarkably drinkable, finishing with a crisp, cool sensation and a lingering chocolate sweetness.
Appearance. Jet black and opaque (40 SRM) with a thick, persistent light-brown head that leaves dense lacing on the glass.
Aroma. Moderate intensity featuring dominant notes of bittersweet chocolate and roasted coffee beans, accented by a distinct, punchy mint freshness. Low resinous hop notes and faint dark fruit esters are present in the background.
Taste. Initial impression of rich, dark chocolate and roasted grain. A clear, cooling peppermint flavor emerges mid-palate, balanced by a moderate hop bitterness and citrusy undertones. The finish is medium-dry with a lingering cocoa and refreshing mint aftertaste.
Mouthfeel. Medium-full body with a smooth, creamy texture. Moderate-high carbonation enhances the distinctive cooling sensation provided by the mint infusion. Minimal roast-derived astringency and a light, smooth alcohol presence.

Das Baize ist ein Chocolate Stout mit 5,5%, das Schokoladenliebhaber auf jeden Fall überzeugen wird. Die reichhaltigen, intensiven Schokoladennoten kommen gleich zu Beginn, aber dann gibt’s noch das Besondere: Eine frische Menthol-Note, die dem Bier eine spannende Wendung verleiht. Es ist nicht zu schwer, sondern schön cremig und ausgewogen, mit einer malzigen Süße, die perfekt mit der frischen Menthol-Note harmoniert. Wen das ganze an eine gewisse Süßigkeit erinnert, die besonders gut nach 8 Uhr schmeckt, der liegt vermutlich nicht ganz falsch.
