Third Moon Brewing

This Double IPA showcases a potent hop profile through an amplified pairing of Mosaic and Talus. The sensory experience is lead by a distinctive creamy tangerine character, supported by Mosaic's signature notes of tropical stone fruit and mixed berries. The Talus addition introduces nuanced layers of pink grapefruit, dried roses, and a subtle herbal complexity. Despite its strength, the inclusion of oats provides a smooth, pillowy texture that softens the firm bitterness typical of the style. The result is a high-intensity, hop-forward ale that balances saturation with a clean, dry finish and well-integrated alcohol warmth.

Appearance. Deep gold to light orange-copper with a noticeable haze from the use of oats. Features a moderate-sized, persistent, creamy white head with excellent lacing.

Aroma. High intensity hop aroma with prominent tropical melon, blueberry, and tangerine. Clean, neutral graininess in the background with a light floral and woody-citrus note. No significant malt sweetness or diacetyl; light, clean alcohol present.

Taste. Strong hop flavors of citrus zest, tropical fruit, and stone fruit. Medium-high hop bitterness that is firm but lacks harshness. Soft, supportive malt character with a grainy-sweet note from the oats. Finish is medium-dry and clean with a lingering fruity aftertaste.

Mouthfeel. Medium body with a smooth, velvety texture. Moderate carbonation and a restrained, smooth alcohol warmth. No hop-derived astringency despite the high hopping rate.
