Wish You Were Here is a vibrant American IPA that showcases the innovative marriage of Thiol yeast with concentrated Cryo Cascade and Cryo Citra hops. The Thiol yeast unlocks deep tropical nuances that amplify the hops' natural character, leading with intense aromas of ripe honeydew melon and bright, zesty citrus. This moderate-strength ale is built upon a clean, supportive malt backbone that allows high-impact hop oils to dominate the sensory experience. On the palate, expect a refreshing burst of grapefruit and tropical fruit followed by the crisp, firm bitterness expected of the style, finishing dry and remarkably clean.
Appearance. Color is medium gold to light amber (7-9 SRM). The beer shows brilliant clarity with a medium-sized, long-lasting white head that leaves significant lacing on the glass.
Aroma. High intensity hop aroma featuring pronounced honeydew melon, passionfruit, and ruby grapefruit. The use of Thiol yeast contributes a distinctive tropical ester profile. Low, clean, bready malt sweetness provides a neutral base, while the fermentation profile remains professionally clean.
Taste. Initial impression is a burst of zesty citrus and sweet melon. Medium-high bitterness is assertive but smooth, lacking any resinous harshness. Low malt flavors of light cracker and pale bread support the hops. The finish is medium-dry with a lingering aftertaste of citrus peel.
Mouthfeel. Medium-light body with a smooth, soft texture. Carbonation is medium-high, providing a lively, refreshing mouthfeel. Alcohol warmth is very light and well-integrated for its strength.
