Tarte Diem is a vibrant Wild Specialty Beer designed for high drinkability at a sessionable 4.5% ABV. This refreshing sour showcases a lush, tropical fusion of ripe mango and zesty pineapple, creating a bright, fruit-forward profile. The addition of fresh ginger provides a sharp, aromatic snap that cuts through the lactic acidity and tropical sweetness. Appearance. Pours a hazy, pale golden to light amber (4–7 SRM) with a slight orange tint from the mango. The white head is moderate in height but typically shows low retention due to the acidity and fruit oils.
Aroma. High intensity aromatics of fresh-cut pineapple and ripe mango dominance. A distinct, spicy, and earthy ginger note provides a sharp counterpoint. Subtle lactic sourness is present, alongside very low bready malt and a clean fermentation profile with minimal funk.
Taste. Initial impression is tart and tropical. Explosive flavors of sweet mango and acidic pineapple are prominent. The fresh ginger adds a spicy, slightly phenolic bite that cuts through the fruit. Malt is very low and neutral. Hop bitterness is negligible, allowing the lactic acidity to provide the structure. The finish is very dry, crisp, and refreshing with a lingering ginger zing.
Mouthfeel. Medium-light body with high, effervescent carbonation. There is no alcohol warmth. The ginger provides a mild, pleasant palate-cleansing spice, and the finish is bone-dry with no lingering cloying sweetness.
