Drawing from its spontaneous fermentation roots, the nose leads with distinctive barnyard and hay-like funk, complemented by bright citrus notes and a subtle, crackery malt foundation. On the palate, a sharp but refreshing acidity takes center stage, reminiscent of citrus rind and rhubarb, perfectly balancing the light-bodied grain character. This Lambic remains remarkably dry through the finish, where a lingering tartness and earthy complexity reflect its traditional Belgian inspiration. It is a nuanced, crushable wild ale that emphasizes vibrant fermentation character over hop presence.
Appearance. Pale yellow to golden (3-6 SRM). Clarity ranges from hazy to clear, topped with a white-colored head that typically displays poor retention.
Aroma. Moderate intensity of lactic sourness blended with bright citrus and a subtle, grainy, crackery malt character. Notes of hay, barnyard funk, and light earthy tones are prominent, with no detectable hop aroma.
Taste. Initial impression is a sharp, refreshing lactic sourness with notes of citrus rind and light pome fruit. The malt presence is low, offering a crackery, grainy flavor. There is no hop flavor or bitterness, as the sourness provides the primary balance. The finish is very dry and crisp.
Mouthfeel. Light to medium-light body with a high, puckering tartness. Carbonation is low to moderate, providing a clean, non-astringent mouthfeel without any alcohol warmth.
