Enrico Palazzo is an opulent Imperial Stout matured for thirteen months in Tommyrotter Bourbon barrels. This collaboration crafts a sophisticated sensory experience, characterized by a cappuccino-like bouquet emerging from the integration of Buffalo-sourced Public and Maryland-sourced Vigilante cold brew coffee. The aroma is dominated by rich vanilla and dark chocolate, while the palate offers a velvety fusion of roasted coffee bean and charred oak. A distinctive feature is the inclusion of peppers, which introduce a soft, creeping heat that builds gradually, providing a brilliant counterpoint to the residual sweetness. The result is a harmonious, multi-layered stout where barrel-derived bourbon notes and adjuncts meld seamlessly.
Appearance. Jet black and completely opaque. It supports a thick, deep tan head with moderate retention. Due to the high alcohol content and viscosity, the beer exhibits prominent legs when swirled in the glass.
Aroma. High intensity with a complex blend of roasted coffee, bittersweet chocolate, and strong vanilla. The Tommyrotter barrels contribute notes of bourbon, toasted oak, and caramel. Low esters of dried plum and fig are present, alongside a smooth, warming alcohol presence.
Taste. Rich and intensely flavored with initial notes of dark chocolate and creamy vanilla. The coffee provides a deep, roasty middle that leads into flavors of caramel and toasted oak. Bitterness is moderate to firm, balanced by a significant malt sweetness. A subtle pepper spice emerges in the finish, building over time without becoming harsh, leaving a lingering aftertaste of mocha.
Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate. A noticeable but smooth alcohol warmth is present, complemented by a slight, pleasant tingling from the pepper addition.
