Quy (2021) is a monumental Imperial Stout, showcasing an intricate blend of double barrel-aged and bourbon barrel-aged components. The sensory experience is led by an intense, dessert-like bouquet of toasted raw coconut, marshmallow, and floral honey. On the palate, it delivers a decadent profile reminiscent of German chocolate cake and liquid S’mores, underpinned by rich layers of dark chocolate and heavy maple syrup. Despite its significant 14% ABV, the heat is elegantly tempered by over 20 months of aging, resulting in a velvety, viscous texture. The finish is lingering and sweet, harmonizing deep roasted malts with luscious notes of coconut cream and bourbon-soaked oak.
Appearance.Jet black and completely opaque (40+ SRM). Pours with a thick, dark tan head that shows moderate retention. Extreme viscosity is evident through heavy, slow-moving legs on the glass.
Aroma.High intensity with a complex layering of toasted coconut, rich bourbon, and marshmallow. Deep malt character of dark chocolate and cocoa is complemented by the sweetness of maple syrup and honey. Subtle oak vanillin and very low dark fruit esters are present.
Taste.Extremely rich and sweet, following the aroma with dominant flavors of German chocolate cake, coconut cream, and charred oak. The malt profile features bittersweet chocolate and toasted bread, while the honey and maple syrup provide a dense, sugary foundation. Very low hop bitterness; the balance is heavily tilted toward the sweet adjuncts and malt. The finish is long and dessert-like, with lingering marshmallow and cocoa.
Mouthfeel.Full to very full-bodied with a thick, chewy, and coating texture. Carbonation is low, enhancing the beer's creamy, velvety weight. Alcohol warmth is noticeable and firm but remarkably smooth and well-integrated for 14% ABV.
