This complex hybrid offers a vivid sensory journey, blending a rustic, oak-aged Saison with a modern tropical IPA. The aroma is dominated by a burst of sugary pineapple and white wine notes from Nelson, Mosaic, and Citra, supported by the resinous depth of Simcoe. Beneath the hop intensity lies a multi-grain foundation of wheat, oats, spelt, and rye, providing a soft, earthy complexity. The palate is defined by high carbonation and a signature dry finish, where spicy fermentation phenols meet vibrant stone fruit. Subtle oak-aged nuances and aged whole leaf hops add a layered, farmhouse soul to this effervescent and fruit-forward ale.
Appearance. Pale gold with a slight orange hue; SRM 5-8. Thick, rocky, ivory head with excellent retention and persistent Belgian lacing. Hazy and unfiltered due to the heavy inclusion of oats and wheat.
Aroma. High intensity. Intensely fruity with prominent notes of pineapple, passionfruit, and gooseberry. A rustic, grainy malt backbone features hints of nuttiness from spelt and a touch of rye spice. Fermentation-derived black pepper and citrus esters are evident, complemented by a subtle, earthy funk from the oak-aged components.
Taste. Initial impression is a wave of tropical fruit sweetness—primarily pineapple—that transitions into a soft, grainy malt mid-palate. Hop flavors of citrus and berry are bright and forward. Bitterness is moderate but firm, well-integrated with the spicy yeast character. The finish is remarkably dry and clean, with a lingering tropical fruitiness and a touch of peppery spice.
