This Imperial Stout presents an opulent sensory journey, shaped by two years in Tawny port barrels. An initial wave of decadent dark chocolate and creamy lactose from the base beer meets a sophisticated layer of oxidized dessert wine. The extended maturation infuses deep notes of dried figs, raisins, and fine oak, creating a complex, vinous character that complements the roasty espresso core. At 11.5% ABV, the warmth is integrated and smooth, providing a backdrop for the dark fruit profile. The result is a viscous, harmonious profile where the charred grain bitterness is softened by the luscious richness of the barrel and milk sugar.
Appearance. Jet black (40 SRM) and completely opaque. Pours with a dense, persistent deep tan head that leaves oily lacing on the glass. Pronounced legs are visible upon swirling, indicating high viscosity and alcohol content.
Aroma. High intensity and complex. Dominant aromas of bittersweet chocolate, cocoa powder, and roasted coffee. The port barrel contribution is prominent, offering notes of raisins, dried plums, and a nutty, oxidized sweetness. Hints of charred oak and vanilla emerge as it warms, with very low earthy hop presence and clean fermentation esters.
Taste. A massive initial impression of dark chocolate and sweet cream. The mid-palate is dominated by the Tawny port influence, providing layers of dark fruit and vinous dessert wine flavors. Roasted malt bitterness is firm but restrained by the residual sweetness of the milk sugar and barrel character. The finish is long and complex, featuring lingering notes of black currant, toasted oak, and a pleasant, warming alcohol presence.
Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture. Carbonation is low to moderate, enhancing the creamy mouthfeel. A smooth, well-integrated alcohol warmth is noticeable and persistent, without being sharp or solventy.
