This open-fermented Weissbier presents a modern interpretation of the classic German wheat beer style. The open fermentation process amplifies the signature banana esters and spicy clove phenols, providing a vibrant, yeast-forward aromatic foundation. A thoughtful dry-hop addition introduces an extra layer of fresh floral and citrus notes that elegantly complement the bready, doughy wheat malt base. On the palate, the interplay between a creamy, fluffy texture and a crisp, spritzy finish creates a highly refreshing experience. It balances traditional fermentation complexity with a bright, contemporary hop presence, resulting in a sophisticated and aromatic take on a Hefeweizen.
Appearance. Pale gold with a significant, persistent haze. Features a very thick, moussy, and long-lasting white head that leaves decorative lacing on the glass.
Aroma. High intensity with prominent banana esters and moderate clove phenols. The aroma is supported by a bready, grain-sweet wheat character and a distinct, modern floral and light citrus hop presence from the dry-hopping.
Taste. Moderate banana and clove flavors are well-balanced against a soft, bready, and doughy wheat malt profile. Very low bitterness allows the yeast character and floral hop notes to shine. The finish is relatively dry and clean, with a lingering hint of spicy yeast and citrusy hops.
Mouthfeel. Medium body with a characteristic fluffy and creamy fullness. High carbonation provides a prickly, effervescent sensation and a refreshing, spritzy finish. No alcohol warmth or astringency present.
