This barrel-fermented Saison presents a sophisticated interplay of rustic funk and modern hopping. The Veil’s signature mixed fermentation approach introduces a balanced oak character that complements the pungent tropical notes of Nelson hops and the juicy orange citrus of Amarillo. Aromatic layers of gooseberry, white grape, and stone fruit meld with spicy yeast phenols and a distinct earthy funk. On the palate, the beer is highly attenuated and bone-dry, allowing the bright citrus and tannic oak to shine through a moderate bitterness. The result is a complex, effervescent farmhouse ale with a lingering, puckeringly clean and fruity finish.
Appearance.Pale gold to light orange with a hazy, unfiltered appearance; features a tall, dense, rocky white head with excellent retention and significant Belgian lacing.
Aroma.High intensity; pungent tropical fruit notes of gooseberry and passionfruit from Nelson hops are paired with zesty orange and grapefruit from Amarillo. A rustic, leathery funk and distinct vanillin-oak presence provide depth, alongside spicy black pepper and faint pome fruit esters.
Taste.Initial impression of juicy citrus and white grape gives way to a soft, grainy malt backbone. Very high attenuation creates a bone-dry profile where moderate hop bitterness is balanced by a light, bright acidity and funky complexity. Oak tannins add structure, finishing with a lingering spicy and tropical aftertaste.
Mouthfeel.Medium-light body with very high, effervescent carbonation. A light, integrated alcohol warmth is present, accompanied by a subtle tannic astringency from the barrel fermentation.
