Merciless is a high-impact Double IPA that showcases immense hop saturation through the heavy use of Citra, Galaxy, Simcoe, and Vic Secret. The inclusion of raw wheat, malted wheat, and oats creates a velvety, cushioned foundation that carries an explosive profile of tropical passion fruit, bright citrus, and resinous pine. Citra and Simcoe LP additions amplify the sensory experience, delivering concentrated layers of peach and pineapple without aggressive bitterness. This 8% powerhouse balances its strength with a plush mouthfeel and a clean fermentation profile, resulting in a modern, hop-forward experience where the lush fruit character remains the vibrant centerpiece from the first aroma to the smooth finish.
Appearance. Pours a hazy, pale gold to light orange (7-9 SRM). Features a moderate-sized, persistent white head with excellent retention and thick, soapy lacing.
Aroma. High to intense aroma dominated by tropical fruit (passion fruit, pineapple), citrus (grapefruit, tangerine), and a touch of resinous pine. A soft, grainy, neutral malt character from the wheat and oats provides a subtle background, alongside light fruity fermentation esters and a clean, integrated alcohol presence.
Taste. Strong and complex hop flavors of mango, lime, and pine resin lead the palate. The malt flavor is low but supportive, characterized by soft bread and grainy notes. Bitterness is firm but exceptionally smooth and lacking harshness, allowing the saturated hop oils to shine. The finish is medium-dry with a long, lingering hoppy aftertaste and a light, clean alcohol note.
Mouthfeel. Medium-full body with a notable creaminess and smooth texture from the heavy oat and wheat grist. Carbonation is moderate. No hop-derived astringency is present, though a restrained, smooth alcohol warmth is noticeable.
