Dreamless is a delicate and focused unspiced Witbier that highlights the elegance of raw wheat and a specific Belgian White Ale yeast. Despite the lack of traditional spice additions, the aroma presents a nuanced bouquet of soft bready malt, light honey, and a gentle zesty citrus character. The palate is refreshingly crisp, leaning into a grainy wheat texture and subtle vanilla notes that conclude with a clean, dry finish. Effervescent and incredibly light at 4% ABV, it captures the essence of a summer refresher without the distraction of botanical additives, allowing the fermentation character and grain bill to shine.
Appearance. Very pale straw in color (3 SRM). The beer is very cloudy from wheat proteins, exhibiting a milky, whitish-yellow shine. It features a dense, white, moussy head with excellent retention and light lacing.
Aroma. Moderate intensity featuring bready and grainy wheat malt. Subtle notes of honey and vanilla are present. Aromatics include moderate zesty, citrusy-orange fruitiness and light peppery yeast-derived phenols. Despite being unspiced, the Belgian White Ale yeast provides a complex herbal and spicy background.
Taste. Initial impression of pleasant bready, grainy wheat flavor with a hint of honey. Moderate zesty, orange-citrusy fruitiness dominates the mid-palate. Light herbal-spicy flavors from the yeast provide depth without the use of spices. Hop bitterness is low, supporting a refreshingly crisp and dry finish with no harsh aftertaste.
Mouthfeel. Medium-light body with a notable smoothness and light creaminess from the wheat. High carbonation provides an effervescent, lively character. Refreshing and crisp, with no alcohol warmth or astringency.
