Imperial IPA 8 º
This Double IPA masterfully bridges the gap between classic West Coast structure and modern hazy nuances. A potent blend of Citra, Amarillo, CTZ, Mosaic, and Simcoe hops explodes with saturated notes of resinous pine, zesty grapefruit, and ripe mango. While fermented with a signature house yeast that hints at tropical fruit esters, the hopping technique provides a firm, clean bitterness characteristic of the West Coast style. The golden, slightly translucent pour carries a lean, crackery malt profile that allows the diverse hop complex to remain the focal point, finishing crisp and dry with a lingering citrus zest and resinous bite.
Appearance. Deep gold to light amber (7-9 SRM). Pours with a slight, modern haze but remains translucent. Features a moderate-sized, persistent, off-white head with excellent lacing.
Aroma. High intensity hop-forward bouquet featuring bold grapefruit, tangerine, and mango. Secondary notes of resinous pine, dank herbs, and subtle forest floor provide depth. Clean, neutral grainy malt sits in the background, complemented by light, fruity esters from the house yeast fermentation.
Taste. Dominant flavors of citrus zest and tropical fruit lead into a sharp, resinous pine mid-palate. Bitterness is moderately high and firm but clean, lacking any harsh edges. The malt character is soft and unobtrusive, offering a hint of toasted cracker. Finishes dry and crisp with a long-lasting, resinous, and zesty aftertaste.
Mouthfeel. Medium body with a smooth, soft texture. Carbonation is medium-high, providing a lively, scrubbing effect on the palate. Alcohol warmth is well-integrated and smooth, with no perceived hop-derived astringency.
