Confection King reimagines the classic Berliner Weisse as a dessert-inspired sour. A base of Pilsner malt and wheat provides a foundation of raw bread dough and sourdough character, which is immediately sharpened by a clean, high-intensity lactic acidity. This sharpness is softened by the addition of lactose sugar, marshmallows, and vanilla, creating a sensory profile reminiscent of a lemon meringue pie. High carbonation lifts the confectionery aromas, while the vanilla provides a rich, floral sweetness. The result is a vibrant balance between puckering tartness and a creamy, candy-like finish that retains the refreshing nature of the base style.
Appearance. Pale straw color (2-3 SRM). Somewhat hazy with a large, dense white head that displays moderate to poor retention. Highly effervescent.
Aroma. Moderate to high sharp lactic sourness dominates, layered with strong notes of vanilla and sugary marshmallow. Background notes of raw bread dough and sourdough from the wheat and Pilsner malt. No hop aroma.
Taste. Initial clean lactic sourness is immediately met by a creamy sweetness from the lactose and marshmallow. Flour-like, doughy wheat flavors persist through the mid-palate. The finish is deceptively dry despite the intense vanilla and marshmallow character. Balance is a tug-of-war between acidity and dessert-like sweetness. No hop flavor or bitterness.
Mouthfeel. Medium body, significantly fuller than a standard example due to the lactose addition. High carbonation with a notable creaminess and crisp acidity. No alcohol warmth.
