The Piggy Brewing Company Monstruous Fat Pig Stout Coffee Bourbon
This Imperial Stout presents a colossal sensory profile defined by deep immersion in coffee and bourbon character. The grist, featuring Pils, Cara150, and Chocolate rye, creates a foundation of spicy cocoa and charred grain, while Flaked Oats contribute a dense, silky texture. The inclusion of Rye and Brown malts adds a peppery complexity that cuts through the intense sweetness. Fermented cleanly with US05 yeast, the focus remains on the marriage of dark roasted malts and spirituous oak. Summit hops provide a firm, anchoring bitterness that balances the 11% ABV warmth and luscious, lingering finish of dark chocolate, vanilla, and espresso.
Appearance. Jet black and completely opaque (40+ SRM). Pours with a thick, persistent deep tan head that leaves significant lacing. High viscosity is apparent through noticeable legs on the glass when swirled.
Aroma. High intensity with a dominant blend of freshly roasted coffee, dark chocolate, and rich bourbon. Significant notes of vanilla, toasted oak, and a subtle peppery spice from the rye malts. Esters are low, allowing the clean fermentation and roasted grain to shine. Very low hop aroma.
Taste. Initial impression of bittersweet chocolate and espresso. The Chocolate rye and Rye malts provide a distinctive spicy mid-palate that complements the bourbon-soaked oak and vanilla. Medium-high bitterness from Summit hops and roasted grains balances the rich malt sweetness. The finish is long and warming, featuring lingering notes of cocoa, charred wood, and dark-roasted coffee.
Mouthfeel. Full-bodied and exceptionally chewy with a velvety, luscious texture aided by the flaked oats. Carbonation is moderate-low. A smooth, noticeable alcohol warmth reflects the strength without being sharp or solventy.
