This German Pils from The Kernel showcases the modern evolution of the style through precise dry-hopping. The beer presents a marriage of traditional European brewing and contemporary Australian hop character, specifically highlighting the Enigma variety. A backbone of crackery, doughy Pilsner malt provides a crisp foundation for the hops to express complex layers of redcurrant, melon, and a hint of tropical fruit. Highly attenuated and firmly bitter, it retains the refreshing, clean lager profile expected of a classic Pilsner while offering a vibrant, fruit-forward aromatic profile that distinguishes it from traditional noble-hopped examples.
Appearance. Pale straw to deep yellow (3 SRM). Brilliant clarity with a tall, dense, creamy white head that exhibits excellent persistence and leaves intricate lacing on the glass.
Aroma. Moderate to high hop intensity, featuring distinctive Enigma notes of raspberry, pinot noir grapes, and melon over a background of spicy nuances. The malt is low but present, offering a clean grainy-sweet and toasted cracker scent. Fermentation is very clean with no diacetyl or sulfur.
Taste. Sharp, clean bitterness leads, immediately followed by Enigma hop flavors of redcurrant, light tropical fruit, and a touch of white pepper. The malt provides a subtle doughy and honey-like sweetness that supports the hop intensity without cloying. The finish is very dry and crisp, with a lingering, clean bitterness and a minerally snap.
Mouthfeel. Medium-light body with a brisk, moderately-high carbonation that enhances the crispness. The texture is smooth and clean, lacking any astringency, with a very light, well-integrated alcohol presence.
