This sessionable Irish Stout presents a sophisticated interplay between traditional dark malt character and modern hop brightness. A base of malted barley and oats creates a light-bodied yet supple texture that carries savory notes of roasted grain, dark biscuit, and unsweetened cocoa. The signature inclusion of Simcoe hops provides a vibrant aromatic contrast, introducing layers of resinous pine and subtle grapefruit zest that lift the deeper, roasty profile. Exceptionally dry and balanced, the kettle and dry-hopping additions provide a clean, bitter snap that refreshes the palate, making this table-strength stout both complex and incredibly drinkable.
Appearance. SRM 35-40. Deepest ebony with garnet highlights. Pours with a moderate, tan-colored head that shows good retention and leaves a fine lacing on the glass. Opaque.
Aroma. Moderate intensity. Clean, coffee-like roasted grain notes and dark chocolate dominate the malt profile, supported by a distinctively modern hop character. The Simcoe hops contribute prominent aromas of resinous pine and woody earthiness. Low fruity esters and a savory, biscuity malt backbone.
Taste. Initial impression is of crisp roasted bitterness and dry grain. Deep flavors of coffee and bittersweet cocoa from the dark malts are balanced by a firm, resinous hop flavor and grapefruit-peel brightness. Medium-high bitterness that lingers into a very dry, clean finish. The oats provide a subtle savory complexity that prevents the dry profile from feeling harsh.
