This vibrant Saison displays a masterful interplay between traditional farmhouse character and modern aromatics. The inclusion of malted barley, wheat, and oats provides a rustic, grainy backbone with a subtle silkiness. The whole cherries introduce a bright, tart stone-fruit complexity and a delicate floral lift that harmonizes with the nuanced funk of the mixed-fermentation. Mosaic hops drive the profile forward, offering distinct layers of blueberry, mango, and tropical citrus that sit atop the beer's refreshing acidity. Oak-influenced depth and a bone-dry finish make this an elegant, effervescent expression of fruit-forward complexity and traditional fermentation techniques.

Appearance. Pours a hazy, pale salmon-pink to light copper (8-10 SRM) with a dense, rocky, white to light-pink head that shows excellent persistence and provides delicate Belgian lacing. Highly effervescent with visible carbonation rising through a slightly opaque body.

Aroma. High intensity with a complex bouquet of tart whole cherries and stone fruit. Mosaic hops contribute prominent notes of blueberry, mango, and a hint of resinous pine.
