The Hastings Project IPA

American IPA 6.2 º 60 IBU
This West Coast-inspired American IPA presents a bold sensory profile anchored by a robust, multi-dimensional malt bill. Munich and Crystal Rye malts provide a rich, slightly sticky backdrop with notes of toasted grain and spicy undertones. The hop expression is aggressive and complex; Simcoe and Chinook drive classic resinous, piney, and pungent dank aromatics, while the inclusion of HBC630 introduces an intriguing jammy, stone fruit depth. High bitterness cleanses the palate, balancing the spicy rye character and lingering with a persistent, resinous finish. It is a modern, punchy take on the style that emphasizes hop intensity alongside distinct malt complexity.
Appearance. Medium gold to light reddish-amber (9-12 SRM). Brilliantly clear with a medium-sized, off-white head that exhibits excellent persistence and significant lacing.
Aroma. High intensity hop aroma featuring prominent notes of pine resin and pungent dankness from Chinook and Simcoe, layered over a jammy, dark berry, and stone fruit character from HBC630. The malt provides a moderate supporting presence of toasted bread and a subtle peppery spice from the Rye and Munich malts. Clean fermentation profile.
Taste. High hop flavor follows the aroma with aggressive pine, resin, and forest floor dankness. Initial malt sweetness from Munich and Crystal Rye offers a honeyed and toasted bread impression before a firm, medium-high bitterness takes over. The finish is medium-dry and lingering, characterized by a resinous hop coating and a faint rye spiciness. Highly balanced toward hops but with sufficient malt structure.
Mouthfeel. Medium body with a smooth, slightly oily texture. Carbonation is medium-high. Very light, well-integrated alcohol warmth. No notable astringency despite the high hop load and rye content.

This Westie has been brewed with our South London neighbours Villages. Maris, Munich II, Malted Rye and Crystal Rye malts meet big Chinook hop additions throughout, alongside Simcoe Cryo in the aroma steep, before more Simcoe and finished with a big dry hop of HBC630. It's got all the sticky sweetness and bitterness of a usual West Coast, but the HBC630 gives a big jammy punch.
