The Flying Inn Tau is an assertive Double IPA that showcases an intense aromatic profile through a significant double dry-hopping of Mosaic, Idaho 7, and Citra hops. The sensory journey begins with an explosion of tropical mango and blueberry from the Mosaic, complemented by the sharp grapefruit and lime zest of Citra. Idaho 7 adds depth with layers of pine resin and ripe stone fruit. Underneath this hop intensity, a clean, neutral malt base provides a soft, grainy support without cloying sweetness. The result is a vibrant, high-impact ale that balances its 8% strength with a dry, crisp finish and a lingering, clean bitterness.

Appearance. Deep gold to light orange-copper (7-9 SRM). Pours with a moderate-sized, persistent off-white head that leaves consistent lacing. Slight haze present from the double dry-hopping, yet retains a luminous quality.

Aroma. High intensity hop aroma featuring prominent notes of grapefruit and tangerine from the Citra, backed by Mosaic’s tropical papaya and dark berry character. Idaho 7 contributes a subtle piney, resinous undertone. Malt is clean and supportive, appearing as a light cracker or grainy sweetness. Fermentation is neutral with no distracting esters.

Taste. Initial impression is a wave of citrus and tropical fruit. Firm, moderately high bitterness is immediately present but remains smooth and non-astringent. Malt flavors are low, primarily soft bread and neutral grain. The finish is decisively dry with a long, resinous, and hoppy aftertaste. Alcohol is well-integrated and clean.

Mouthfeel. Medium body with a smooth, soft texture. Carbonation is medium-high, providing a lively prickle on the tongue. A gentle, restrained alcohol warmth is present, consistent with its 8% ABV, but lacks any harsh or solventy notes.
