El Aleph is a vibrant Hazy IPA that captures a complex sensory spectrum through the use of experimental HBC-431 hops and a specialized New England yeast strain. This expressive ale pours with a characteristic opaque glow, releasing an intense bouquet of tropical stone fruits, berries, and subtle earthy undertones inherent to the hop variety. On the palate, the soft, plush texture provides a canvas for layers of juicy peach and citrus, balanced by a restrained bitterness. The fermentation profile adds a supportive ester complexity, resulting in a cohesive, fruit-forward experience that finishes with a smooth, off-dry lingering fruitiness.
Appearance. Straw to light orange (4-6 SRM) with a deep, opaque haze and a luminous shine. It is topped by a dense, rocky, meringue-like white head with excellent retention and thick lacing.
Aroma. High intensity hop aroma featuring distinct notes of peach, mango, and a unique berry-like earthiness from the HBC-431 hops. The New England yeast contributes subtle stone fruit esters that complement the hop profile, backed by a clean, lightly bready malt presence.
Taste. A burst of juicy tropical fruit and citrus flavors dominates the initial impression. The malt provides a neutral, grainy foundation that stays in the background. Bitterness is low to moderate, feeling soft rather than sharp. The finish is smooth and off-dry, with a clean, lingering fruit character and no hop harshness.
Mouthfeel. Medium-full body with a soft, silky, and rounded mouthfeel. Carbonation is moderate. There is a very light, well-integrated alcohol warmth and no astringency or raw grain texture.
