This refreshing Saison captures the essence of the Northumberland wilderness, led by the bright, citrusy punch of lemon zest and the resinous, earthy depth of foraged sprucetips. Brewed with a soft wheat base, it presents a rustic, grainy profile that supports a vibrant fermentation character. The palate is defined by its extreme dryness and crispness, where the spruce provides a subtle piney bite that complements the peppery yeast phenols. Highly effervescent and thirst-quenching, it balances traditional Belgian spice with a localized botanical twist, making for an evocative and lean farmhouse ale that finishes clean and snappy.
Appearance. Pale gold with a slight, persistent haze from the wheat content. Topped with a dense, rocky white head that exhibits excellent retention and leaves significant Belgian lacing. Highly effervescent with visible rising bubbles.
Aroma. Moderate to high intensity featuring a complex blend of citrusy esters, specifically lemon zest, and spicy phenols reminiscent of black pepper. The foraged sprucetips contribute a distinctive but integrated subtle pine and forest-floor woodiness. A light, grainy wheat malt character provides a soft, rustic background.
Taste. Initial impression is exceptionally dry and crisp. The flavor profile leads with grainy malt and a tang of lemon, followed by a mid-palate of peppery spice and resinous spruce. Bitterness is moderate but accentuated by the high attenuation, leading to a very dry, refreshing finish with a lingering spicy and piney aftertaste.
Mouthfeel. Light body with a very high, effervescent carbonation level. The mouthfeel is prickly and crisp without any astringency. At 4.6% ABV, there is no perceived alcohol warmth, enhancing its sessionable, thirst-quenching nature.
