This foeder-aged Saison presents a complex, New Zealand-inspired profile that balances rustic earthiness with bright, botanical elegance. The infusion of orange blossom honey lends a delicate floral sweetness and subtle nectar notes, harmonizing with the lemon balm’s citrus-herbaceous lift and the soothing, apple-like floral depth of chamomile. Aging in oak foeders introduces a refined woody structure and a whisper of tartness, providing a counterpoint to the grainy malt base. Effervescent and dry, it captures a refreshing island character where the herbal tea-like qualities intertwine seamlessly with the spicy, fruity esters characteristic of a traditional Farmhouse Ale.
Appearance. Pale gold to light amber in color. Exhibits a long-lasting, dense, white rocky head with significant Belgian lacing. Unfiltered and slightly hazy due to the addition of botanicals and foeder aging.
Aroma. High intensity with a complex blend of orange blossom honey and chamomile providing a heavy floral and herbal tea-like bouquet. Moderate citrus notes from lemon balm and pome fruit esters are complemented by spicy black pepper phenols. Low grainy malt and a faint, woody oak character from foeder conditioning.
Taste. Initial impression is a bright mix of citrus and herbal tea, featuring lemon balm and chamomile. A soft, grainy malt backbone supports moderate fruity esters. Hop bitterness is medium-low, partially supplanted by a refreshing, light lactic tartness from the foeder. The orange blossom honey contributes floral complexity rather than sugar, leading to a very dry, crisp finish with a lingering herbal aftertaste.
Mouthfeel. Medium body with high, effervescent carbonation. Features a light, well-integrated alcohol warmth consistent with its strength. Very low astringency from the oak and herbs, providing a clean, mouth-watering sensation.
