The Bruery Pasas Picasso

Old Ale 19.1 º
Pasas Picasso is a monumental expression of an Old Ale, amplified to an extraordinary degree by its massive alcohol content and dessert-forward additions. The sensory experience is dominated by the concentrated dark fruit of sun-dried raisins, which integrates seamlessly with the style's natural vinous and Port-like oxidation. High-quality vanilla beans lend a rich, creamy aromatic layer, while subtle cinnamon provides a woody, spicy counterpoint to the heavy malt sugars. Expect a tapestry of black treacle, toffee, and dark caramel that lingers indefinitely. The result is a luxurious, slow-sipping experience with the complexity of a fine fortified wine and the warmth of a spiced winter warmer.
Appearance. Pours a deep, near-opaque mahogany (SRM 40+) with a thin, light-tan head that dissipates quickly to a persistent collar; low retention and minimal lacing due to high alcohol concentration.
Aroma. High intensity; complex layers of dark fruit, specifically raisins and prunes, melded with black treacle and toffee. Prominent vanilla bean sweetness and a delicate cinnamon spice are supported by significant vinous, Sherry-like oxidative notes and a noticeable, warming alcohol presence. No hop aroma.
Taste. Initial impression is intensely malty and sweet, featuring luscious flavors of molasses, burnt sugar, and dark caramel. The raisin addition amplifies the fruity esters, while vanilla adds a marshmallow-like richness. Cinnamon provides a gentle, warming spice on the mid-palate. Hop bitterness is low, providing just enough structure to balance the heavy malt. The finish is long, sweet, and complex, with lingering notes of spiced fruitcake and fine Madeira.
Mouthfeel. Full and viscous with a thick, chewy body; low carbonation enhances the syrupy, velvet-like texture. Significant alcohol warmth is evident and welcoming. A subtle woody tannin from barrel aging provides a hint of structure against the residual sweetness.
