This decadent Imperial American Porter presents an indulgent sensory experience inspired by French toast. The foundation of the Chronology base delivers deep chocolate and toasted malt notes, which are seamlessly interwoven with the warmth of bourbon barrel aging. Aromatic peaks of spicy Cinnamon and earthy Nutmeg greet the nose, followed by a luxurious layer of rich Maple Syrup and creamy Vanilla. The high alcohol content provides a significant, well-integrated warmth that supports the sticky-sweet breakfast profile. The finish is long and velvety, balancing roasted malt depth with the lingering sweetness of spiced maple and oak-driven vanillin.
Appearance. Opaque, very dark brown nearing black (40 SRM) with garnet highlights when held to the light. It pours with a thin, mocha-colored head that shows moderate to low retention, common for a high-gravity barrel-aged beer, leaving a light oily sheen on the glass.
Aroma. High intensity and complex. Dominant scents of maple syrup and bourbon-soaked oak lead the profile, supported by clear notes of cinnamon and nutmeg. A rich, roasted malt backbone provides aromas of dark chocolate and espresso, complemented by a creamy vanilla bean sweetness and subtle dark fruit esters.
Taste. Initial impression is intensely sweet and syrupy, featuring bold maple syrup and vanilla bean flavors. The mid-palate introduces spicy layers of cinnamon and nutmeg which blend with the bourbon and toasted oak character. The American Porter base offers a moderately strong roasted malt flavor, reminiscent of bittersweet chocolate and char, providing a necessary counterpoint to the sweetness. Low hop bitterness is perceived, trailing into a long, lingering, and sweet finish of maple and spice.
Mouthfeel. Full-bodied and viscous with a thick, syrupy mouth-coating texture. Carbonation is moderately low, which enhances the richness. A significant, smooth alcohol warmth is present, reflecting the high ABV without being harsh or fusel. No notable astringency.
