Appearance. Deep copper to light brown (18 SRM); low, light tan head with poor retention due to high alcohol and oils; slight haze is present from the heavy adjunct additions.
Aroma. High intensity; dominant notes of toasted coconut, rich vanilla, and sweet dulce de leche; secondary aromas of walnut, milk chocolate, and bourbon-soaked oak; moderate caramel maltiness underneath with a clean fermentation profile.
Taste. Initial impression is very sweet and rich; layers of caramelized sugar and toffee malt flavors are complemented by coconut and creamy vanilla; walnut provides an earthy, nutty mid-palate; cacao nibs offer a gentle dark chocolate bitterness to counter the dulce de leche; medium-high bitterness is present but largely masked by residual sugar; finish is long and sweet with a noticeable bourbon warmth.

This ale was inspired by our love for decadent desserts and aged in bourbon barrels with coconut, cacao nibs, walnuts, vanilla, and dulce de leche.
