Heavanilla offers a decadent sensory experience, merging the sharp profile of a Straight Sour Beer with the complexity of bourbon barrel aging. The profile is defined by an aggressive yet clean lactic sourness that cuts through the lush, creamy presence of vanilla beans. High-intensity notes of toasted oak and sweet bourbon are layered over a base of biscuity and crackery pale malts. Although crafted as a sour tripel ale, the massive alcohol content provides a sophisticated warmth that balances the lemony fruitiness and spicy esters, resulting in a complex, lingering finish that oscillates between tart citrus and sweet confectionery.
Appearance. Pale gold to amber (5-8 SRM). Pours with a thin white head showing poor retention. Clarity is clear to slightly hazy.
Aroma. High intensity with a dominant, sharp lactic sourness. Strong aromas of vanilla bean and bourbon-soaked oak. Moderate fruity esters suggesting peach and lemon zest. Pale malt character is biscuity and crackery. No hop aroma. Clean fermentation without acetic notes.
Taste. Initial impression of powerful lactic sourness, immediately followed by rich vanilla and sweet bourbon. Complementary crackery and grainy malt flavors provide a sturdy background. Hop bitterness is undetectable. Citrusy-lemony fruitiness is moderate. Complexity is high with toasted wood notes. Finish is off-dry with a lingering acidic and vanilla-sweet aftertaste.
Mouthfeel. Medium-full body with a creamy, rich texture. Moderate carbonation. Notable alcohol warmth is significant but smooth. Crisp acidity provides a clean finish despite the high gravity.
