Freckles is a bold and decadent interpretation of an American Stout, elevated by its massive Imperial strength and bourbon barrel aging. Inspired by Mexican Molé, it presents a complex tapestry of sensory cues, led by the intense aromatic presence of cacao nibs and rich vanilla. The dark, roasted malt core provides a backdrop of bittersweet chocolate and espresso, while the addition of cinnamon and cayenne introduces a sophisticated layer of spice and a subtle, creeping heat. The bourbon influence adds woody depth and a velvety smoothness, rounding out a full-bodied profile that finishes with a lingering, spicy warmth.
Appearance. Jet black (SRM 40+) and completely opaque. It supports a large, persistent head of dark tan to light brown foam that leaves dense lacing on the glass.
Aroma. High intensity. Strong roasted malt character featuring dark chocolate, espresso, and charcoal. These notes are deeply integrated with aromatic vanilla, woody bourbon, and earthy cacao nibs. Moderate spicy notes of cinnamon are evident, with a subtle, clean alcohol presence and very low hop aroma.
Taste. Moderate to very high roasted flavors of bittersweet chocolate and roasted coffee beans. Initial malt sweetness is rich with caramel and vanilla from the barrel aging. The mid-palate introduces spicy cinnamon and a light, earthy cacao flavor. Bitterness is firm but balanced by the heavy body. The finish is long and complex, featuring a rising, gentle heat from cayenne and a smooth bourbon warmth.
Mouthfeel. Full-bodied and viscous with a creamy, mouth-coating texture. Carbonation is moderate. Significant but smooth alcohol warmth is present, complemented by a light spicy tingle from the cayenne and cinnamon without being acrid.
