This complex Brett Beer showcases a bold intersection of vinous sophistication and wild fermentation. The high-gravity base is transformed by the addition of Tempranillo grapes, imparting rich layers of plum, black cherry, and a structured tannic backbone. Brettanomyces fermentation lends an earthy, leathery funk that complements the wine-like acidity and deeply toasted malt profile. Despite its significant strength, the finish is remarkably dry and attenuated, revealing lingering notes of dried fruit and aged oak. It is a potent, sensory-rich ale where the fruity esters and spicy phenols provide a vibrant contrast to the underlying alcohol warmth and dark fruit depth.
Appearance. Deep mahogany to dark ruby with garnet highlights; clarity is slightly hazy due to the high alcohol content and grape solids. The tan head is modest with low retention and minimal lacing.
Aroma. High intensity; prominent aromas of black cherry and plum from the Tempranillo grapes merge with leathery, earthy, and slightly barnyard Brettanomyces funk. Underlying notes of toasted caramel and dark bread crust are present, accompanied by a noticeable but clean alcohol presence and faint spicy phenols.
Taste. Complex initial impression of dark stone fruits and red wine tannins. The Tempranillo provides a vinous depth that balances a medium-low bitterness. Malt flavors of biscuit and light chocolate are present but secondary to the wild yeast character. The beer finishes very dry and crisp with a lingering wood-like dryness and a hint of funky earthiness.
Mouthfeel. Medium-full body that feels leaner than its gravity suggests due to high attenuation from the Brettanomyces. Moderate carbonation; significant alcohol warmth is present but well-integrated. Low astringency from grape skins.
