Pouring an opaque, viscous black, it leads with an intense aromatic profile of cool peppermint, dark chocolate, and bourbon-soaked vanilla. The base of rich roasted malts provides a sturdy foundation for the layers of milk sugar and crumbled cookies, creating a dessert-like complexity. On the palate, the cooling mint contrasts beautifully against deep cocoa and charred oak, while the significant alcohol presence is tempered by a velvety, decadent sweetness. Aroma. High intensity; dominant peppermint and cool menthol aromas are immediate, followed by rich dark chocolate, cocoa powder, and sweet vanilla beans. Notes of toasted oak, bourbon, and a light caramel sweetness from the barrel interplay with subtle dark fruit esters like prunes and a distinct creamy, milk-sugar character.
Taste. Initial impression is intensely sweet and decadent, featuring layers of chocolate cookie dough and peppermint frosting. The mid-palate reveals roasted grain bitterness and charred oak, which provide necessary balance to the milk sugar. Bourbon flavors of vanilla and toffee are prominent. The finish is long and warming, with a lingering combination of peppermint and bittersweet chocolate.
