This opulent Old Ale delivers a sensory experience reminiscent of a spiced harvest dessert, shaped by its extensive maturation in Weller bourbon and Speyside scotch barrels. The aroma is a concentrated blend of baked apples, toasted oats from the granola addition, and aromatic vanilla. On the palate, a heavy malt backbone of molasses and dark toffee supports intense flavors of cinnamon and nutmeg, while the dual-barrel aging contributes notes of charred oak, caramel, and a refined hint of peat smoke. Viscous and profoundly warming, it finishes with a lingering sweetness that captures the essence of a freshly baked apple crisp.
Appearance. Deep mahogany (22 SRM). Low, tan head with minimal retention and slight oily lacing. Generally clear but may show a slight haze from the adjunct additions.
Aroma. High intensity. Rich baked apple and vanilla dominate, layered over molasses, toffee, and toasted granola. Prominent spirit notes of bourbon oak and faint Speyside scotch smoke are present, accented by distinct cinnamon and nutmeg spice and dark fruit esters.
Taste. Initial impression is intensely malty and sweet. Luscious caramel, nut, and molasses flavors merge with stewed apples and vanilla. Very low hop bitterness allows the spices and spirit-soaked barrel character to lead. Complex finish featuring dark fruit esters and a lingering, spiritous warmth of bourbon and wood tannins.
Mouthfeel. Full, chewy, and viscous body. Low carbonation. Significant, well-integrated alcohol warmth is evident. Smooth, velvety texture with a light wood-derived astringency.
