The Beersteward

This Wild Specialty Beer is a vibrant, sessionable sour that bridges the gap between a Session IPA and a natural wine. The use of emmer grain imparts rustic, sun-dried hay notes, while hibiscus flower creates a striking pinkish-red hue. The aromatics are dominated by citrusy and winey hop profiles, reminiscent of Sauvignon Blanc or sparkling Rosé. A soft, lactic sourness provides a refreshing acidity that complements the low 3.8% ABV. Delicate floral undertones and a dry, crisp finish make it an ideal aperitif, balancing the hop-forward character with an elegant, effervescent, and vinous complexity.

Appearance. Distinctive pink to soft ruby hue; hazy clarity with a fine suspension; white to light pink head with moderate retention and delicate lacing.

Aroma. Moderate intensity; floral hibiscus and vinous hop aromas suggesting white grape and gooseberry; rustic hay notes from emmer grain; low lactic tartness; minimal malt sweetness.

Taste. Initial tartness followed by citrusy hop flavors of lime and grapefruit; emmer grain provides a light, bready, and grassy base; hibiscus adds a cranberry-like tang; low bitterness; dry, crisp finish with a lingering floral aftertaste.

Mouthfeel. Light body; high carbonation; no alcohol warmth; crisp and effervescent with a very slight tannic dryness from the botanicals and grain.
